Happy Holidays from the IES Team

As the year comes to an end, we can all be thankful for what we have and for what we have endured with everyone's support. We commend all of the healthcare professionals who have worked on the frontlines during these unprecedented times.

During the holidays, it's important to stay in touch with loved ones, reflect back on the year, and look forward to what's to come. We suspect you might miss communicating with your IES so we asked some of the current IES team to share some holiday tidbits about themselves!

Celesta: What are your New Year's goals?

Ashley: What is your favorite way to relax during the holidays?

Deirdre: How will you celebrate the holidays differently this year due to COVID?

Kelsey: What is your favorite holiday recipe?

"Russian Tea Cakes, Mexican Wedding Cookies, Snowball cookies, or whatever you like to call them are a staple in my own holiday season! They’re simple yet delicious and very traditional all over the world which makes them enjoyed by so many different cultures! They aren’t too sweet but still satisfying to your sweet tooth which makes them perfect for pretty much everyone (unless you have a nut allergy). The first time I made these was during my first Holiday season in Nagoya, Japan. I made them for my Landlady and her family and they were a huge success so I’ve made them every year since then."

  • 1 cup unsalted butter
  • 2 tsp vanilla extract (homemade is always best!)
  • 1.5 cup powdered sugar (separated, into 1 cup and ½ cup)
  • 2 ¼ cup flour
  • Big pinch of salt
  • ¾ cup chopped nuts (walnuts or pecans are usually good!)
